Peppermint Chocolate Crinkle Cookies

Ingredients
  

  • 2 c all purpose flour
  • 1 c dark cocoa powder
  • t baking powder
  • c coconut sugar
  • 1 egg
  • ½ c applesauce
  • ½ c avocado oil
  • 1 t peppermint extract
  • 1 t vanilla extract
  • pinch of salt
  • 3 crushed candy canes
  • ½ c dark chocolate chips
  • c powdered sugar

Instructions
 

  • Pre heat oven to 350°
  • In a mixer, combine the egg, avocado oil, extracts, applesauce and sugar. Mix until combined.
  • In a separate bowl, whisk together flour, salt, baking powder, and cocoa powder.
  • Slowly add in the flour mixture to the wet ingredients in the mixer. Mix until thoroughly combined and a big ball of dough is formed.
  • Chill the dough in the refrigerator or freezer for 30 minutes.
  • Roll into balls and roll the balls into the powdered sugar.
  • Bake for 10-12 minutes and allow to cool completely.
  • Melt the chocolate chips and dip the top of the cookie into the melted chocolate.
  • Sprinkle the crushed candy canes on top of the melted chocolate and allow to cool completely.
