Soft Baked Ginger Molasses Cookies
Gluten free, dairy free soft and chew ginger molasses cookies

- 2 c almond flour
- ¼ c brown sugar
- ¼ c coconut sugar
- 3 tbsp ghee
- 1 egg
- 3 tbsp molasses
- 2 tbsp honey
- 1 t vanilla extract
- 1 t cinnamon
- 1 t ginger
- ½ t all spice
- ½ t baking soda
- pinch of salt
Extra Sugar for Rolling Cookie Dough
- ⅓ c coconut sugar
- 1 tbsp cinnamon
- 1 tbsp ginger
Pre heat oven to 350°.
Combine the wet ingredients and sugars in a mixer and mix until thoroughly combined.
In a separate bowl, whisk together the dry ingredients (flour, spices, baking soda and salt).
With the mixer on low, slowly add the flour mixture to the wet ingredients. Mix until thoroughly combined.
Wrap cookie dough in plastic wrap and chill in the refrigerator for one hour.
Roll dough into equal size balls and roll the balls in the cinnamon, ginger, sugar mixture.
Bake for 10 minutes.
