Gluten Free Crispy Air Fryer Chicken Fingers

Extra crispy chicken tenders made in the air fryer. This lunch idea is a healthier version of a childhood favorite. Make these gluten free chicken fingers in under 30 minutes

Ingredients
  

  • 3 large chicken tenders (or breasts cut into smaller strips)
  • 1 egg
  • ½ c almond flour
  • 3 T potato starch (you can also sub corn starch here)
  • 3 T nutritional yeast
  • 1 t of each: salt, pepper, garlic, cayenne
  • olive or avocado oil spray

SPICY HONEY MUSTARD

  • 2 T spicy brown mustard
  • 2 T Mike's Hot Honey
  • salt, pepper and garlic to taste

Instructions
 

  • Arrange three bowls to make the breading. In one bowl, whisk the egg. In one bowl, add the potato starch. In one bowl, mix the almond flour, nutritional yeast and seasonings.
  • Make sure the chicken tenders are totally dry. Dip them in the potato starch and cover completely.
  • Next, dip the chicken in the egg wash and then back into the potato starch.
  • Dip the chicken in the egg wash for a second time (the double breading is key to extra crispiness) and finally in the seasoned almond flour.
  • Add the breaded chicken fingers to the air fryer making sure they aren't touching or overlapping. Spray lightly with the olive oil or avocado oil spray.
  • Air fry for 18 minutes at 350° flipping them halfway through the cook time.
  • Mix together spicy brown mustard, hot honey and spices to make the yummiest honey mustard you've ever had in your life. I SWEAR this tastes just like that classic diner honey mustard.
