Arrange three bowls to make the breading. In one bowl, whisk the egg. In one bowl, add the potato starch. In one bowl, mix the almond flour, nutritional yeast and seasonings.
Make sure the chicken tenders are totally dry. Dip them in the potato starch and cover completely.
Next, dip the chicken in the egg wash and then back into the potato starch.

Add the breaded chicken fingers to the air fryer making sure they aren't touching or overlapping. Spray lightly with the olive oil or avocado oil spray.
Air fry for 18 minutes at 350° flipping them halfway through the cook time.
