I love how making Christmas cookies always gets me in the holiday spirit – especially when I get to do it side by side with the best co-chef, my mom. Now let’s get into today’ recipe, Copycat Nutter Butter Sandwich Cookies!

Today it’s all about one of my favvvvvvorite ingredients – peanut butter! Its not unusual for me to eat peanut butter toast, peanut butter and jelly sandwiches, and sometimes a scoop from the jar all in one day. My other favorite thing about these peanut butter sandwich cookies? The thick and fluffy dairy free peanut butter frosting. Ohhhh my gosh it’s soo good I had quite a few “samples” before I actually frosted the cookies. I mean, can you blame me? It’s like eating straight peanut butter fudge.
Did anyone else make the painstakingly tough choice as a student trying to decide between the nutter butters and the cosmic brownies? I swear this decision plagued me every day and was the hardest decision I faced in middle school. I still love you, cosmic brownies, I still love you.
These giant nutter butter cookies are so easy to made and are way better than any store bought cookie. The rich dairy free peanut butter frosting makes this christmas cookie recipe completely irresistible.
All purpose flour – I haven’t tested this with any flour alternatives, but I believe that almond flour would work well as a gluten free substitution
Peanut butter – Obviously! Be sure to use peanut butter that only has peanuts and salt as the ingredients. If you use peanut butters that have additional oils, like nasty palm oil, you will mess with the composition of the dough.

Brown sugar – This holds slightly more water than white sugar, so it ensures that your cookies will be moist and soft, rather than dry and crumbly.
Coconut sugar – Adds additional sweetness
Honey – adds an additional sweetness and helps the peanut butter flavor to really POP
