Hello my people! Welcome to the first ever Cookie Week here on Brunette Collective! There is no better way to get in the holiday spirit than with some delicious Christmas cookies. This week I’ll be sharing a new cookie recipe with you every single day. Today is day one and I’m sharing one of my all time favorite holiday cookie recipes, Chai Snickerdoodles! This recipe takes the traditional snickerdoodle recipe and gives it a fun little twist with the addition of the chai spice. These cookies are a dairy free recipe, too!

Enjoy these chewy chai snickerdoodles with a cup of morning coffee or sipping that afternoon cup of tea

I have to give you a fair warning, you will be addicted to these dairy free chewy chai snickerdoodles. During the recipe testing process, I definitely ate A LOT of batter. I regret nothing. Without further ado, let’s get into day one of Cookie Week!

Ingredients in the chewy chai snickerdoodles

All purpose flour – as much as I love gluten free baking, I haven’t yet tested this recipe with a gluten free alternative. I would assume gluten free flour would give you the same results, but no promises.

Ghee – I love using ghee as a dairy free substitute for butter.

Eggs

Baking powder

Peppermint Extract – for the minty tang in these Christmas cookies

Vanilla extract

Sugar – while I love using coconut sugar, this recipe calls for regular white sugar. I haven’t tested this recipe with a substitute, so I can’t make any promises about results if you sub sugar for something else.

Oat milk

Pinch of salt

Vanilla extract

Some extra granulated sugar + chai spice – to roll the cookie dough balls in before baking

Chewy Chai Snickerdoodles

The traditional snickerdoodle recipe gets a little twist with the addition of chai spice. This classic christmas cookie is sure to be a favorite this year! These chewy and soft snickerdoodles are perfect with a morning cup of coffee

HOW TO MAKE CHAI SPICE

In a jar or other container mix together:

2 tsp nutmeg

2 tsp ground cloves

2 tsp all spice

2 tsp cardamom

4 tsp cinnamon

6 tsp ginger

Shake it all up and store in an air tight container. This chai spice is AMAZING added to tea, coffee and other baked goods.

CHEWY CHAI SNICKERDOODLES

A spicy twist on a classic Christmas cookie recipe

Chill the dough 30 mins
Total Time 55 mins

Ingredients
  

  • c all purpose flour
  • ½ c sugar
  • ¾ c ghee
  • 1 t cream of tartar
  • 1 t baking soda
  • 1 t baking powder
  • 2 tbsp chai spice
  • 2 tbsp oat milk

A LITTLE EXTRA TO ROLL THE DOUGH IN BEFORE BAKING

  • 1/3 c sugar
  • 2 tbsp chai spice

HOW TO MAKE CHEWY CHAI SNICKERDOODLES

Pre-heat oven to 350°. Cream ghee, sugar and vanilla in a stand mixer (or hand mixer). Whisk together dry ingredients in a separate bowl. Turn on the hand mixer and slowly alternate adding in dry ingredients with oat milk. Add a little flour mixture, add a little oat milk – repeat until everything is incorporated thoroughly. Chill dough in the freezer for 30-60 minutes. Mix together 1/3 c of sugar with 2 T chai spice. Roll dough into equal size balls and then roll into chai sugar mixture. Bake for 10 minutes.
The great thing about this dough is you can bake a few cookies and freeze the rest of the dough if you don’t feel like making them all at once. Wrap tightly in plastic wrap and keep in the freezer for up to 3 months.
