I am soup’s biggest fan, and Shrimp Corn Chowder is one of my childhood favorites. My version of this chowder is dairy free, but just as delicious and full of flavor. I’m not sure if this recipe is unique to Pennsylvania, because my boyfriend looked at me like I had two heads when I said I was making shrimp corn chowder, but I digress, it’s a little sweet, a little spicy, and so nourishing for the colder temperatures this fall.

Bone broth is a great alternative to traditional chicken broth. I love including bone broth in my soups to add a richer flavor and incorporate more protein and collagen in my meals. There are infinite benefits to bone broth, and they are especially important in the fall and winter to boost our immune systems. I love making homemade bone broth with the remains of a roasted chicken – there is so much collagen that is not only great for our hair, skin and nails, but also so beneficial to the gut. A healthy gut is a healthy body!
If I don’t have time to make my own bone broth from scratch, my favorite brands are Kettle and Fire, Pacific Foods or found at my local famers market. I always suggest checking out your local farmers markets or health food stores for homemade bone broth, too.
No way! I typically use frozen raw shrimp since I always keep my freezer stocked. Of course you can use fresh shrimp too, but frozen are just as nutritious and delicious with this recipe.
