I am fully obsessed with shrimp corn chowder for fall

I am soup’s biggest fan, and Shrimp Corn Chowder is one of my childhood favorites. My version of this chowder is dairy free, but just as delicious and full of flavor. I’m not sure if this recipe is unique to Pennsylvania, because my boyfriend looked at me like I had two heads when I said I was making shrimp corn chowder, but I digress, it’s a little sweet, a little spicy, and so nourishing for the colder temperatures this fall.

This dairy free shrimp corn chowder is the perfect summer to fall transition recipe to use up the last of the summer corn in a hearty cozy soup that you can store in the freezer for the colder days ahead.

What you’ll need for dairy free shrimp corn chowder

Dairy Free Shrimp Corn Chowder

Ingredients
  

  • 2 cans whole kernel corn (4 whole ears of corn if you are not using canned)
  • 1 can creamed corn
  • 1/2 lb red potatoes, diced (I use baby creamer potatoes)
  • 1 lb peeled, deveined shrimp
  • 3 c chicken bone broth (You can totally sub chicken broth or veggie stock instead)
  • 2 shallots, diced
  • 3 green onions, sliced
  • 1 jalapeño
  • 3 T flour
  • 1/2 c coconut cream
  • 1 c oat milk
  • 4 cloves garlic
  • 1 T avocado oil
  • 2 t Old Bay (You can always add more if desired)
  • salt + pepper to taste

Instructions
 

  • In a dutch oven or large pot, add avocado oil over medium heat.
  • Sauté shallot, garlic, green onion (only add in white part of onion and set aside green stalk for the topping) and jalapeño ( add as many or as little of the seeds based on preference. I like a little spice so I add half the seeds/stalk) until fragrant. About 3 minutes.
  • Slowly add in flour one tablespoon at a time while continuously whisking. Make sure flour is completely combined, you may need to add a few splashes of bone broth while whisking.
  • While still whisking, gradually add in bone broth one cup at a time. This should take 1-2 minutes for everything to be evenly combined and mixed together.
  • Add in coconut cream and oat milk while whisking.
  • Add in potatoes and cook until tender. About 15 minutes.
  • Add peeled shrimp and cook for about 3-4 minutes. Don't overcook or the shrimp will start to get rubbery.
  • Add salt, pepper and old bay to taste.
  • Top with chopped green onion, a few fresh jalapeño slices and some old bay. ENJOY!
  • I divide mine up into single serving containers and freeze mine for another day.

Which brand of bone broth is the best to use for healthy soup recipes?

Bone broth is a great alternative to traditional chicken broth. I love including bone broth in my soups to add a richer flavor and incorporate more protein and collagen in my meals. There are infinite benefits to bone broth, and they are especially important in the fall and winter to boost our immune systems. I love making homemade bone broth with the remains of a roasted chicken – there is so much collagen that is not only great for our hair, skin and nails, but also so beneficial to the gut. A healthy gut is a healthy body!

If I don’t have time to make my own bone broth from scratch, my favorite brands are Kettle and Fire, Pacific Foods or found at my local famers market. I always suggest checking out your local farmers markets or health food stores for homemade bone broth, too.

Does it matter if I use fresh or frozen shrimp in this chowder recipe?

No way! I typically use frozen raw shrimp since I always keep my freezer stocked. Of course you can use fresh shrimp too, but frozen are just as nutritious and delicious with this recipe.
